LES CINQ SENS, a restaurant located within the Nagasaki Stadium City Hotel, will be reopening on (Tue), October 14, 2025, marking its first anniversary since opening.

The new chef, Nobuyuki Tanaka, will continue to maintain his traditional style of stimulating the five senses - taste, appearance, aroma, movement and sound - while evolving into "Nagasaki French," fusing Nagasaki's rich ingredients with the essence of shippoku (table-style dining) culture and other countries. We offer a special dining experience that will add a touch of elegance to your special moments.

Renewal brings a new dining experience
■Nagasaki French Cuisine - A fusion of Japanese, Western and Chinese cuisine
Nagasaki is a port city where foreign cultures have intersected since ancient times. At LES CINQ SENS, we create special "Nagasaki French" cuisine by combining the tradition of "shippoku cuisine," a fusion of Japanese, Western, and Chinese cuisine, with French techniques. The style of enjoying French cuisine with chopsticks is one example of this philosophy. Nagasaki's history of flexibly incorporating foreign cultures is deeply ingrained in each and every dish.

■ Chef's personal selection of Nagasaki's seasonal bounty
The star of LES CINQ SENS is the seafood of Nagasaki, carefully selected by the chef himself. Nagasaki is surrounded by the sea on three sides and boasts some of the best fish species in the country. The chef himself visits the port, builds relationships of trust with the producers, and prepares the freshest seasonal ingredients that are at their best that day.
To ensure that guests can enjoy the most delicious, carefully selected fish, the main course, poisson (fish dish), is chosen by the guests themselves using a "choice system." Guests can choose from fresh, seasonal fish and shellfish caught in the waters off Nagasaki, which the chef will then prepare on the spot. Chef Tanaka's desire to infuse each dish with the surprise and joy of seeing the ingredients they have chosen cooked right before their eyes creates a special experience that is full of a lively atmosphere.

■ Course to enjoy the changing seasons
The course menu consists of eight dishes that change with the seasons, skillfully incorporating Japanese ingredients such as seafood from the waters off Nagasaki and directly delivered from Hirado, grilled flying fish from Hirado, and fish sauce from Goto, with a creative approach using sophisticated French techniques.
We use a variety of cooking methods, including boiling, steaming, frying and grilling, to prepare dishes that bring out the natural flavor of the ingredients to the fullest.

Based on the theme of the five senses, which is the name of the restaurant, "LES CINQ SENS," we aim to provide our customers with an unforgettable and special experience.

At the counter seats, you can enjoy the live feeling of watching the chef cook right in front of you, and hear directly from the chef about the thoughts that went into the dishes and stories related to Nagasaki ingredients.

■LES CINQ SENS New Chef Nobuyuki Tanaka
Originally from Nagasaki Prefecture, Tanaka gained experience at a famous French restaurant in the Kansai region, honing his skills and sensibilities. He then led the culinary development at Nagasaki Stadium City when it opened. What Tanaka values is conveying the local culture, nature, and the passion of the producers through his cooking. He sincerely works with ingredients nurtured by the sea and land of Nagasaki, striving to create "cuisine that can only be enjoyed here."

■Stadium City Hotel Nagasaki Executive Chef Michihiro Sato
Working alongside new chef Tanaka Nobuyuki in developing and supervising the menu for "LES CINQ SENS" is Michihiro Sato, executive chef of Stadium City Hotel Nagasaki, who has experience working at a number of renowned restaurants and has been awarded one Michelin star.
While traveling around the country, he was impressed by the quality of the ingredients in Kyushu, especially Nagasaki, and developed a strong desire to serve cuisine in this region.

We put our heart and soul into each and every dish, using an abundance of local ingredients, including the seafood and vegetables that Nagasaki is proud of, and conveying their appeal through our cuisine so that all visitors to the city can experience the richness of Nagasaki's food culture.
